California Avocados

If you know First Watch, you know that we care – a lot – about the quality of the ingredients we serve to you. It’s kind of a big deal. If you know avocados, you know that summertime is peak California Avocado season, and that’s something we like to dance about!

Quick history lesson: Avocados originated in south-central Mexico sometime between 7,000 and 5,000 BC, but the wild variety wasn’t cultivated for thousands of years. Spanish conquistadors loved the fruit but couldn’t pronounce it and changed the Aztec word to the more manageable “aguacate,” which eventually became “avocado” in English.

Today, around 90 percent of the nation’s avocado crop is produced in California. It takes 14 to 18 months to grow a single avocado, and each tree can produce up to 200 avocados per season. The Hass avocados that you often see at the grocery store from March to September are California natives; the Hass variety was discovered in La Habra Heights in southern California nearly 100 years ago, and every Hass avocado in the world can trace its lineage to the original Hass mother tree. *Mind. Blown.*

During peak season, California Hass avocados are served in lots of our First Watch restaurants across the country. We love the folks who grow them because they care about quality just as much as we do! To give you an idea, less than 1 percent of California is deemed suitable for growing avocados. We’re talking only the richest of rich soil, the freshest coastal breezes and, of course, the friendly California sun. All that paired with the care of more than 2,000 California Avocado growers makes for an ideal environment for growing only the best superfruit. Those growers make sure each freshly picked avocado goes from tree to table in just a few days. It’s really a labor of love!
